This Cottage Cheese Peanut Butter Mousse is a quick, creamy, and protein-packed dessert that combines the rich flavors of peanut butter and dark chocolate with the smooth texture of cottage cheese. Perfect for a healthy treat or a satisfying snack, it blends natural ingredients with minimal effort for a deliciously indulgent experience.

Ingredients

Base Mousse Ingredients

  • 1 cup cottage cheese (full-fat for the creamiest texture)
  • ¼ cup peanut butter (natural, no sugar added)
  • 2 tbsp sweetener (maple syrup, or a sugar-free alternative like allulose or Monk fruit)
  • 1 tsp vanilla flavoring
  • ¼ tsp salt (optional)
  • 1-2 tbsp milk or heavy cream (if needed)

Topping Ingredients

  • 2 oz dark chocolate chips
  • 1 tsp coconut oil
  • Chopped peanuts (for garnish)

Instructions

  1. Blend the base ingredients: Add the cottage cheese, peanut butter, sweetener, vanilla flavoring, and salt to a high-speed blender or food processor. Blend for 30–60 seconds until completely smooth and creamy.
  2. Adjust consistency: If the mousse is too thick, add 1–2 tablespoons of milk or heavy cream and blend again until your desired texture is reached.
  3. Chill the mousse: Transfer the mousse to a bowl and refrigerate for 15–20 minutes to help it firm up and allow the flavors to develop.
  4. Melt the chocolate topping: In a small bowl, melt the dark chocolate chips and coconut oil together in the microwave using 20-second bursts, stirring in between, until smooth.
  5. Assemble and serve: Divide the mousse into serving bowls or jars. Drizzle with the melted chocolate mixture and sprinkle with chopped peanuts. Serve immediately or store in the fridge until ready to enjoy.

Notes

  • For a creamier mousse, use full-fat cottage cheese.
  • Natural peanut butter with no added sugar works best for flavor and texture.
  • Sweetener choice can be adjusted based on dietary preferences; maple syrup adds natural sweetness while alternatives like allulose or monk fruit reduce sugar content.
  • Adjust the amount of milk or cream to reach your preferred mousse consistency.
  • Microwave chocolate in short bursts to prevent burning and ensure smooth melting.
  • Garnish can be customized with other nuts or seeds if preferred.
  • Best served chilled but can be kept refrigerated for up to 2 days.
