Instructions

  1. Preheat and Blend: Preheat your oven to 400˚F. Blend the cottage cheese using a high-speed blender or a small food processor until completely smooth. Allow the blended cheese to rest for 10 minutes to improve the texture.
  2. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, baking powder, dried rosemary, garlic powder, onion powder, kosher salt, and coarse ground black pepper. Stir the mix well to evenly distribute the seasonings.
  3. Form Dough: Add the smooth cottage cheese to the dry ingredients and mix thoroughly until a cohesive dough forms.
  4. Rest Dough: Place the dough on a floured surface, shape it into a ball, cover it, and let it rest for 15 minutes to allow the gluten to relax and the dough to hydrate.
  5. Divide and Roll: Cut the rested dough into four equal pieces. Roll one piece out as thin as possible (about 9×12 inches) on a floured surface. Transfer the rolled dough onto a parchment-lined baking sheet.
