Ingredients

Brownie Layer

  • 1/2 cup unsalted butter (112 grams), cut into 8 pieces
  • 2 ounces semi-sweet chocolate (56 grams), about 1/3 cup chocolate chips
  • 1 cup granulated sugar (200 grams)
  • 2 large eggs
  • 1 teaspoon vanilla flavoring
  • 2 tablespoons cocoa powder
  • 1/2 cup all-purpose flour (62.5 grams)
  • 1/4 teaspoon salt

Cookie Dough Layer

  • 1 1/4 cup all-purpose flour (156.25 grams)
  • 1/2 cup unsalted butter (112 grams), softened
  • 1/2 cup packed brown sugar (100 grams), light or dark
  • 1/4 cup granulated sugar (50 grams)
  • 1 teaspoon vanilla flavoring
  • 1/4 teaspoon salt
  • 2-3 tablespoons milk (45 ml)
  • 1/2 cup mini chocolate chips (about 90 grams)

Chocolate Topping

  • 3/4 cup chocolate chips (about 140 grams, about 5 ounces)
  • 1 tablespoon shortening (or unsalted butter)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C). Prepare an 8×8 inch (20×20 cm) baking pan by lining it with parchment paper, allowing an overhang for easy removal, or foil lightly greased.
  2. Melt Butter and Chocolate: In a large heatproof bowl, melt the unsalted butter and semi-sweet chocolate together by microwaving at medium power in 45-second intervals, stirring between each until smooth. Alternatively, melt over a double boiler with gentle stirring.
  3. Mix Brownie Batter: Allow the melted mixture to cool slightly. Whisk in granulated sugar, eggs, and vanilla until combined. Stir in cocoa powder, flour, and salt until no lumps remain.
  4. Bake Brownie Layer: Pour the batter into the prepared pan and smooth the surface. Bake on the middle oven rack for 22-26 minutes, or until the top is set and a toothpick inserted comes out clean or with a few moist crumbs. Remove and let cool.
  5. Heat-Treat Flour: Spread 1 1/2 cups of the all-purpose flour onto a cookie sheet to prevent lumps in the cookie dough, then bake in the preheated oven for 8 minutes. Remove from oven and turn off the heat.
  6. Prepare Cookie Dough: In a medium bowl, beat softened butter with brown sugar and granulated sugar until smooth. Mix in vanilla extract and 2 tablespoons of milk.
  7. Combine Cookie Dough Ingredients: Measure out 1 1/4 cups of the heat-treated flour, sift if lumpy, and beat into the butter mixture along with salt. If the dough is very thick, add an additional tablespoon of milk. Stir in mini chocolate chips.
  8. Layer Cookie Dough: Press the prepared cookie dough evenly on top of the cooled brownie layer to form a smooth layer. Refrigerate to set.
  9. Melt Chocolate Topping: In a heatproof bowl, melt the chocolate chips and shortening (or unsalted butter) together in 45-second microwave intervals at medium power, stirring between each, or melt using a double boiler until smooth.
  10. Apply Chocolate Topping: Quickly pour the melted chocolate topping over the chilled cookie dough layer and smooth evenly using the back of a spoon or an offset spatula. Allow the chocolate to harden; place in the fridge to speed up.
  11. Score and Slice: When the chocolate is about 80% hardened, use a sharp knife to lightly score lines where you intend to slice. Once fully hardened, lift the brownies from the pan using the parchment overhang, place on a cutting board, and cut into pieces.
