This Colombian Pineapple Sauce is a sweet and tangy condiment made from fresh pineapple, cinnamon, and vinegar, simmered to perfection and thickened with cornstarch.   • 1 whole fresh pineapple (Honey Gold or Oro Miel recommended, or regular pineapple)
  • 1 cup (250 ml) water
  • 1 stick cinnamon (or 1 tsp ground cinnamon)
  • 1 cup (200 g) white granulated sugar
  • 2 tbsp white vinegar (or apple cider vinegar)
  • 1 tbsp cornstarch
  • 1/4 tsp salt

Instructions

  1. Make the pineapple puree: Cut the fresh pineapple into chunks and place them into a blender. Add 1 cup (250 ml) of water and blend until the mixture is smooth and pureed.
  2. Prepare the sauce: Pour the pineapple puree into a skillet set over medium heat. Add the sugar and cinnamon stick (or ground cinnamon). Bring the mixture to a gentle simmer and allow it to cook, stirring occasionally, until the sauce reduces and thickens slightly, about 15-20 minutes.
  3. Thicken the sauce: Lower the heat. In a small bowl, mix together the white vinegar and cornstarch until smooth. Pour this mixture into the skillet while continuously stirring the sauce. Continue cooking over medium-low heat, stirring constantly, until the sauce reaches a thick, runny jam-like consistency and comes to a simmer again.
  4. Finish and cool: Turn off the heat, stir in the salt, and remove the cinnamon stick if used. Allow the sauce to cool down to room temperature before serving or storing.
