Ingredients

Cookie

  • 4 ½ cups (576 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 cup (2 sticks / 227 g) unsalted butter, room temperature
  • 1 cup (224 g) vegetable oil
  • 1 cup (200 g) granulated sugar
  • 1 cup (125 g) confectioners’ sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla flavoring
  • ¼ cup freshly ground coffee beans, finely ground (such as espresso grind)

Coffee Glaze (Optional)

  • 1 cup (125 g) confectioners’ sugar
  • 2 tablespoons freshly brewed coffee

Instructions

  1. Prepare Dry Ingredients: Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper. In a large bowl, whisk together the all-purpose flour, baking soda, and cream of tartar to set aside.
  2. Cream Butter and Sugars: In the bowl of a stand mixer fitted with the paddle attachment, cream the unsalted butter, vegetable oil, granulated sugar, and confectioners’ sugar on medium-high speed until the mixture is light and fluffy, scraping down the sides as needed to ensure even mixing.
  3. Add Eggs and Flavorings: Reduce the mixer speed to medium and add the eggs one at a time, mixing just until combined after each addition. Add the vanilla flavoring and finely ground coffee beans, then mix until fully incorporated.
  4. Incorporate Dry Ingredients: Lower the mixer speed to low and gradually add the flour mixture in three parts, scraping the bowl as necessary to ensure the dough is evenly mixed without overworking.
  5. Scoop and Arrange Cookies: Using a 2-tablespoon cookie scoop, portion the dough onto the prepared baking sheets, spacing cookies about 1 inch apart as they do not spread much during baking.
  6. Bake: Bake the cookies for 8-10 minutes or until the edges begin to turn a golden brown color.
  7. Prepare Coffee Glaze (Optional): While the cookies bake or after they cool slightly, whisk together confectioners’ sugar and freshly brewed coffee in a small bowl until smooth and drizzle over the cooled cookies.

Notes

  • Ensure the butter is at room temperature for easier creaming.
  • For best coffee flavor, use freshly ground coffee beans, ideally an espresso grind.
  • The cookies do not spread much; placing them close together is fine.
  • The coffee glaze is optional but adds a wonderful extra burst of coffee flavor.
  • Store cookies in an airtight container to keep them soft.
