Ingredients

  • 113 g Unsalted Butter
  • 1 Large Egg
  • 1 tsp Vanilla bean paste

Sweeteners

  • 100 g Granulated Sugar (caster sugar)
  • 110 g Light Brown Sugar

Flavoring

  • 3 tbsp Espresso Powder

Dry Ingredients

  • 180 g All-purpose Flour (plain flour)
  • ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt

Instructions

  1. Melt Butter and Mix Sugars: Melt the butter in the microwave, then pour it into a bowl with both the granulated and light brown sugars. Stir together until combined.
  2. Prepare Espresso Paste: Add a splash of hot water to the espresso powder and mix thoroughly to form a smooth paste, then add it to the butter and sugar mixture. Stir everything together to combine the flavors.
  3. Add Egg and Vanilla: Incorporate the egg and vanilla bean paste into the mixture, stirring until fully combined for a smooth batter.
  4. Add Dry Ingredients: Sift together the all-purpose flour, baking powder, baking soda, and salt. Gradually add these dry ingredients to the wet mixture, stirring until a soft dough forms.
  5. Chill the Dough: Cover the dough and refrigerate for 30 minutes to firm it up, making it easier to scoop and handle.
  6. Prepare for Baking: Preheat the oven to 350°F (180°C) or 160°C for fan-assisted ovens. Line a cookie sheet with parchment paper to prevent sticking.
