A simple and refreshing Coconut Chia Pudding made with light coconut milk, chia seeds, and natural sweeteners, perfect for a healthy breakfast or snack. It’s vegan, gluten-free, and customizable with your favorite toppings.

Ingredients

Base Ingredients

  • 1 14-ounce can light coconut milk
  • 5 tablespoons chia seeds
  • 1 tablespoon honey (use maple syrup to make vegan)
  • 1/2 teaspoon pure vanilla flavoring
  • Tiny pinch kosher salt

Toppings

  • Toppings of choice such as fresh fruit, jam, nuts

Instructions

  1. Combine Ingredients: In a medium mixing bowl or large liquid measuring cup, stir together the light coconut milk, chia seeds, maple syrup (or honey), vanilla extract, and kosher salt until the chia seeds are evenly distributed. A fork works well to mix thoroughly.
  2. Refrigerate Overnight: Cover the bowl or cup and refrigerate for at least 8 hours or overnight. If possible, stir the mixture once more before bed to prevent clumping, but it’s okay if you forget.
  3. Stir and Taste: In the morning, give the pudding another good stir to evenly combine the chia seeds throughout. Taste and add more maple syrup or honey if you prefer a sweeter pudding.
  4. Serve with Toppings: Portion the pudding into bowls and add your favorite toppings, such as fresh fruit, nuts, or jam. Enjoy immediately or keep refrigerated until ready to eat.

Notes

  • Use maple syrup instead of honey to keep the pudding vegan.
  • Light coconut milk reduces calories but still provides a creamy texture.
  • Chia seeds absorb liquid and thicken the mixture, providing a gel-like pudding consistency without cooking.
  • Adjust sweetness according to taste, adding more sweetener if desired.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
