Ingredients

Cloud Bread Base

  • 4 large egg whites (room temperature)
  • 1 tablespoon cornstarch

  • 2 tablespoons shredded cheese
  • 1 tablespoon olives

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a large baking tray with parchment paper to prevent sticking and set it aside for preparing the cloud bread base.
  2. Whip Egg Whites: In a large mixing bowl, add the room temperature egg whites. Using a hand mixer, beat the egg whites until they reach medium peaks consistency. This aeration is key to achieving the fluffy texture of the cloud bread.
  3. Add Cornstarch and Herbs: Gradually add the cornstarch while continuing to beat the egg whites until stiff peaks form. Then fold in the Italian herbs and salt gently to evenly distribute the flavor without deflating the mixture.
  4. Shape and Bake Crust: Transfer the whipped egg white mixture onto the lined baking tray. Using the back of a spoon, shape it into a circular pizza base. Bake in the preheated oven for about 15 minutes or until the crust is golden on top and set.
  5. Add Toppings and Melt Cheese: Remove the crust from the oven. Spread the pizza sauce evenly over the crust, sprinkle shredded cheese and olives on top.
