Ingredients

Base Batter

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon fine sea salt
  • 1 ½ cups light brown sugar (packed)
  • ½ cup unsalted butter (melted)
  • 2 large eggs
  • 1 teaspoon vanilla bean paste

Cinnamon Swirl

  • 2 Tablespoons granulated sugar
  • 1 Tablespoon ground cinnamon

Icing

  • 4 ounces cream cheese (softened)
  • 2 ounces unsalted butter (softened)
  • 1 cup powdered sugar
  • ½ teaspoon vanilla bean paste

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper or spray it with baking spray to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, combine the all-purpose flour, baking powder, and fine sea salt; stir thoroughly and set aside.
  3. Combine Brown Sugar and Butter: In a large bowl, stir together the light brown sugar and melted unsalted butter until well combined.
  4. Add Eggs and Vanilla: Whisk the two large eggs and one teaspoon of vanilla bean paste into the sugar and butter mixture until smooth.
  5. Combine Dry and Wet: Slowly add the dry ingredients into the wet mixture and stir just until combined to form the batter.
  6. Press Batter into Pan: Evenly press the batter into the prepared baking dish to create a smooth, uniform layer.
  7. Prepare Cinnamon Sugar Swirl: In a small bowl, mix together the granulated sugar and ground cinnamon.
  8. Add Cinnamon Swirl to Batter: Pour the cinnamon sugar mixture in two long lines lengthwise down the batter in the pan.
  9. Create Swirls: Use a butter knife to gently swirl and marinate the cinnamon sugar into the batter for a marbled effect.
  10. Bake Bars: Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool Completely: Remove from the oven and allow the bars to cool completely in the pan to set properly.
  12. Make Cream Cheese Icing: While the bars cool, beat together the softened cream cheese and softened unsalted butter using an electric hand mixer until smooth.
  13. Add Powdered Sugar: Gradually add the powdered sugar a little at a time to the cream cheese mixture, mixing until fully incorporated.
  14. Incorporate Vanilla and Beat: Stir in the vanilla bean paste and then beat the icing on high speed for 2 minutes until it is light and fluffy.
  15. Frost Bars: Cut the cooled bars into 12 squares and either spread the icing over the entire surface or drizzle it in a zigzag pattern over each bar as preferred.

Notes

  • Ensure bars are fully cooled before icing to prevent the frosting from melting.
  • You can use vanilla extract instead of vanilla bean paste if unavailable.
  • For a lighter frosting application, reduce the amount of icing used or apply in a zigzag pattern.
  • Store bars in an airtight container and refrigerate for up to 5 days.
  • These bars can be briefly warmed before serving for a freshly baked taste.
