This Cinnamon Date Chia Pudding is a deliciously creamy and nutritious breakfast option packed with high fiber and protein. Made with Greek yogurt, milk, sweet Medjool dates, aromatic vanilla, and warm cinnamon, blended to smooth perfection before mixing in chia seeds, it offers a ready-to-eat meal that’s both satisfying and healthy. Perfect for those seeking a filling morning meal or snack that supports digestive health and sustained energy.

Ingredients

Dairy & Liquid

  • 2 cups plain nonfat Greek yogurt
  • 3 cups 1% milk

Sweeteners & Flavorings

  • 9 pitted Medjool dates (120 g)
  • 2 teaspoons vanilla flavoring
  • 1 teaspoon cinnamon

Thickening Agent

  • 1 cup chia seeds

Instructions

  1. Blend Ingredients: In a food processor or large blender, add the Greek yogurt, milk (add 2 cups if your blender has an 8-cup max fill), pitted Medjool dates, vanilla flavoring, and cinnamon. Blend until smooth with a few small chunks of dates remaining, which adds texture.
  2. Combine and Add Chia Seeds: Pour the blended mixture into a large mixing bowl. If you initially only added 2 cups of milk, add the remaining 1 cup now and stir well to combine. Then, add the chia seeds and stir thoroughly to avoid clumping.
  3. Rest and Stir: Let the mixture sit for 5-10 minutes, allowing the chia seeds to start absorbing liquid and thickening the pudding. After resting, stir again to redistribute the chia seeds evenly.
  4. Refrigerate: Divide the chia pudding evenly into 4 mason jars or containers with lids. Refrigerate for at least 4 hours to let it fully thicken and develop flavor.
  5. Serve: Before serving, top with fresh fruit or additional chopped dates if desired for extra sweetness and texture.

Notes

  • Enjoy this chia pudding as a high fiber, high protein breakfast or a filling snack.
  • Add extra chopped dates or fresh fruits like sliced strawberries for variety and added nutrients.
  • To prepare only 2 servings, halve all ingredient quantities and divide into 2 jars.
  • If the pudding contains many air bubbles due to over mixing, let it sit for an additional 10-15 minutes and stir gently before dividing into serving jars.
  • Refrigerate the prepared mixture and stir gently later if needed to reduce airiness.
