Ingredients

Salmon

  • 2 pounds skinless salmon fillet
  • Kosher salt, to taste
  • Black pepper, to taste
  • 1 large tomato, sliced into rounds
  • 1/2 lime, sliced into rounds

Garlic Cilantro Sauce

  • 4 to 6 garlic cloves, chopped
  • 1 bunch fresh cilantro, roughly chopped (tender stems included)
  • 1/2 cup extra virgin olive oil
  • 1 lime, juiced
  • Kosher salt, to taste

Instructions

  1. Get ready. Lightly oil a baking pan and place the salmon fillet on top. Set aside at room temperature while you preheat the oven to 425°F and prepare the cilantro sauce.
  2. Make the garlic cilantro sauce. In a small food processor, combine the chopped garlic, fresh cilantro, extra virgin olive oil, lime juice, and kosher salt. Blend until smooth and well combined.
  3. Season and coat the salmon. Lightly sprinkle the salmon with salt and black pepper. Spoon the garlic cilantro sauce over the salmon and spread evenly to coat, reserving any extra sauce for serving. Arrange the tomato and lime slices on top of the salmon.
  4. Bake the salmon. Place the baking pan in the upper half of the preheated oven. Bake until the thickest part of the salmon flakes easily with a fork, about 8 minutes for a 1-inch thick fillet. Use an instant-read thermometer to check for an internal temperature between 125°F and 130°F.
  5. Rest the salmon. Remove the salmon from the oven, cover it loosely with foil, and let it rest for 5 to 8 minutes to finish cooking gently and retain moisture.
  6. Serve. Plate the salmon and accompany it with the reserved garlic cilantro sauce. Enjoy this fresh, flavorful dish with your choice of sides.
