This Chicken Crust Pizza with Veggies is a delicious low-carb alternative to traditional pizza, featuring a crispy chicken base topped with fresh vegetables and melted mozzarella. Perfect for a nutritious and satisfying meal, it combines flavorful ground chicken with classic Italian seasonings and vibrant toppings baked to golden perfection.

Ingredients

Chicken Crust

  • 1 lb ground 93% lean chicken
  • ½ cup grated parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • 1 teaspoon kosher salt

Pizza Toppings

  • ½ cup pizza sauce or marinara
  • ¾ cup low-moisture part-skim mozzarella cheese
  • ½ cup sliced bell pepper
  • ½ cup broccoli crowns
  • ¼ cup sliced red onion

Instructions

  1. Preheat and prepare baking sheets: Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper and lightly spray with cooking oil to prevent sticking.
  2. Mix crust ingredients: In a large bowl, combine ground chicken, grated parmesan, egg, garlic powder, onion powder, Italian seasoning, and kosher salt. Mix thoroughly until well combined.
  3. Form the crusts: Divide the mixture into four equal portions. With wet hands to avoid sticking, shape each portion into a ball. Flatten each ball onto the prepared baking sheets into a circular shape about 7 inches in diameter and ¼ inch thick.
  4. Bake the crusts: Place the baking sheets in the oven and bake for 20 minutes, or until the chicken crusts are cooked through and have turned golden brown.
  5. Add the toppings: Carefully flip each crust, then spread 2 tablespoons of pizza sauce on each one. Evenly distribute 3 tablespoons of mozzarella, sliced bell peppers, broccoli crowns, and red onion over the sauce.
  6. Final bake: Return to the oven and bake an additional 10 minutes, or until the cheese has melted and the vegetables are tender.

Notes

  • Use wet hands to shape the chicken crusts to prevent sticking.
  • Ensure the chicken crusts are fully cooked before adding toppings to avoid undercooked chicken.
  • Feel free to swap or add other vegetables according to preference.
  • Let the pizza cool for a few minutes before slicing for easier handling.
