These Chicken and Veggie Rice Fritters are a perfect baby-led weaning recipe, designed to be soft, nourishing, and full of natural flavor from simple ingredients. Made using cooked rice, tender shredded chicken, steamed carrots, and broccoli, bound with egg and lightly pan-fried in healthy oil, these fritters provide a balanced combination of protein, healthy carbohydrates, and essential vitamins. Ingredients

Fritters

  • ½ cup cooked rice (soft and slightly sticky works best)
  • ¼ cup shredded cooked chicken (finely shredded or minced)
  • 1 egg
  • 2-3 tbsp grated carrot (steamed until soft)
  • 2-3 tbsp finely chopped broccoli florets (steamed until soft)

For Cooking

  • 1 tsp olive oil or avocado oil

Instructions

  1. Prep the veggies: Steam the carrots and broccoli florets until they are soft and tender, then finely chop or mash them to make them easy for your baby to eat and blend well in the fritter mixture.
  2. Mix it all together: In a mixing bowl, combine the cooked rice, shredded chicken, steamed vegetables, and egg. Stir until the mixture is uniform and sticky enough to hold together when formed into patties.
  3. Form small fritters: Using about 2 tablespoons of the mixture per fritter, shape them into small patties and flatten slightly to ensure even cooking.
  4. Cook on a nonstick pan: Heat a drizzle of olive or avocado oil over medium-low heat in a nonstick skillet. Cook each fritter for approximately 2 to 3 minutes on each side, or until they turn golden brown and firm enough to hold together.
  5. Cool and serve: Allow the fritters to cool completely before serving to your baby. You can serve them whole as finger food, cut into strips, or lightly crumbled for younger babies who are just starting solids.

  • For younger babies (8–9 months): crumble or mash the fritters lightly with a fork for easier eating.
  • For older babies and toddlers: serve the fritters whole as a finger food, possibly alongside healthy sides like avocado or yogurt.
