This Chicken Alfredo Gnocchi Bake is a creamy, comforting dish combining tender potato gnocchi with succulent cooked chicken in a rich Alfredo sauce made from cream cheese, heavy cream, and parmesan. Ingredients

Sauce and Base

  • 1 tablespoon butter
  • 3 cloves garlic (minced)
  • 4 ounces cream cheese (1/2 block Philly, softened)
  • 1 cup heavy/whipping cream
  • 1 cup chicken broth

  • 2 cups cooked chicken

Instructions

  1. Prepare cream cheese and oven: Take the cream cheese out of the fridge at least an hour prior or microwave for 20-30 seconds until very soft. Preheat the oven to 375°F (190°C) and adjust the rack to the top third.
  2. Sauté garlic: Melt butter in a skillet over medium-high heat. Add minced garlic and cook for about 30 seconds until fragrant, being careful not to burn.
  3. Make Alfredo sauce: Stir in the softened cream cheese (cut into pieces first), heavy cream, and chicken broth. Cook for 4-5 minutes, stirring nearly constantly, until the cream cheese has melted and the sauce is smooth but not too thick.
  4. Combine gnocchi and chicken: Add the uncooked potato gnocchi and cooked chicken to the skillet. Continue cooking and stirring often for 3 minutes, allowing the gnocchi to begin cooking and absorb the sauce flavors.
  5. Add parmesan cheese: Stir in half of the freshly grated parmesan cheese into the skillet mixture, then remove from heat.
  6. Transfer to baking dish: Pour the skillet contents evenly into a 9×13-inch baking dish, spreading it out for even cooking.
  7. Top with remaining cheese: Sprinkle the remaining parmesan and the shredded mozzarella cheese evenly over the top of the gnocchi mixture.
  8. Bake until bubbly: Bake uncovered in the preheated oven for 25-30 minutes until the cheese is melted, bubbly, and slightly golden.
  9. Rest and serve: Let the bake sit for 5 minutes before serving to allow the sauce to thicken. Season with salt and pepper to taste, then enjoy.
