Ingredients

Cherry Filling

  • 32 ounces frozen cherries
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Cobbler Topping

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon table salt (or 1 teaspoon Kosher salt)
  • 8 tablespoons cold, salted butter, cubed
  • 1 cup half and half
  • 2 teaspoons vanilla bean paste
  • sprinkle of turbinado sugar, optional

Instructions

  1. Heat Oven + Grease Pan: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch white baking dish using butter or cooking spray to prevent sticking.
  2. Make Filling: In a large bowl, mix the frozen cherries with granulated sugar, light brown sugar, cornstarch, and lemon juice until all ingredients are well combined. Pour the cherry mixture evenly into the prepared baking dish.
  3. Mix Dry Ingredients: In another bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt, ensuring the baking powder and salt are evenly distributed.
  4. Cut in Butter: Add the cold, cubed salted butter to the dry ingredients. Using a pastry cutter or your fingers, press the butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces. Be careful not to overwork the dough to keep it tender.
  5. Add Wet Ingredients: Stir in the half and half and vanilla bean paste just until the batter is combined, avoiding overmixing to maintain a light texture.
  6. Scoop Topping: Drop spoonfuls of the topping batter over the cherry filling in the baking dish, distributing it evenly. Optionally, sprinkle with turbinado sugar for added crunch and sweetness.
  7. Bake + Rest: Bake the cobbler in the preheated oven for 40 minutes, or until the topping is deep golden brown. Then cover loosely with foil and bake for an additional 5-10 minutes until the topping is cooked through and the cherry filling is bubbly around the edges. Allow the cobbler to rest for about 5 minutes before serving.
