This Cheesy Zucchini Rice is a quick and comforting side dish combining tender long-grain rice cooked in flavorful chicken broth with fresh grated zucchini and sharp cheddar cheese. Ready in just 25 minutes, it’s a perfect way to add vegetables and cheesy goodness to your meal.

Ingredients

Base

  • 2 cups chicken broth
  • 1 cup white rice (long-grain)

Add-ins

  • 2 tablespoons butter
  • 2 medium zucchinis, grated (about 2 cups)
  • 1 cup sharp cheddar cheese, shredded
  • Salt and pepper, to taste

Instructions

  1. Cook the rice: In a medium saucepan, bring 2 cups of chicken broth to a boil over medium-high heat. Stir in 1 cup of long-grain white rice, then cover and reduce the heat to low. Let it cook gently for about 20 minutes, or until all the liquid is absorbed and the rice is tender.
  2. Add butter, zucchini, and cheese: Remove the saucepan from heat. Stir in 2 tablespoons of butter, the grated zucchini, and 1 cup of shredded sharp cheddar cheese. Mix well until the butter is melted and the cheese is evenly distributed.
  3. Let it rest and season: Allow the mixture to stand for about 5 minutes so the zucchini softens slightly and the flavors meld. Season with salt and pepper to taste before serving.

Notes

  • Grate the zucchini finely to ensure it cooks quickly and blends well with the rice.
  • Use freshly shredded sharp cheddar for the best flavor and melting quality.
  • For a vegetarian version, substitute vegetable broth for chicken broth.
  • This dish pairs well with grilled chicken or fish as a side.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
