  • 4 corn tortillas, torn into quarters
  • 4 cups shredded chicken (from a 2½-pound rotisserie chicken, skin and bones removed)
  • 1 15-ounce can low sodium black beans, rinsed and drained
  • 3 ounces shredded cheese (Mexican cheese blend, Monterey Jack, or mozzarella, about ¾ cup)

Instructions

  1. Preheat the Oven: Preheat your oven to 500°F (260°C) to prepare for melting and browning the cheese on top of the skillet dish.

  5. Add Main Ingredients: Fold torn corn tortillas, shredded chicken, and drained black beans into the sauce mixture, tossing gently until everything is thoroughly coated and well distributed.
  6. Heat Skillet Mixture: Spoon the combined mixture back into the reserved hot skillet. Cook over medium heat on the stovetop, stirring occasionally, for about 3 minutes until the dish is warmed through.
