Ingredients

Rice and Liquids

  • 1 1/2 cups rice (white or brown)
  • 3 cups low-sodium chicken broth

  • 2 tablespoons butter

Instructions

  1. Cook the Rice: In a large saucepan, combine the rice and chicken broth. Bring to a boil over medium-high heat. Stir once, cover with a lid, and reduce the heat to low.
  2. Simmer: Cook for 25-30 minutes, or according to the package instructions for your rice variety. Once done, remove from heat and let it stand, covered, for 5 minutes to absorb remaining moisture.
  3. Incorporate Roasted Garlic: Chop the head of roasted garlic finely and gently stir it into the cooked rice. Return the saucepan to low heat.
  4. Add Cream and Cheese: Stir in the heavy cream, Parmesan cheese, and butter. Continue stirring until the butter and cheese have fully melted and blended into the rice, about 1-2 minutes. Season with salt and pepper to taste.

  • To roast garlic, slice the top off a head of garlic to expose the cloves, drizzle with olive oil, wrap in foil, and roast at 400°F (200°C) for about 30-40 minutes until soft.
