Ingredients

Gnocchi and Cooking

  • 1 tablespoon salted butter
  • 1 package (16 ounces) potato gnocchi

Beef Mixture

  • ½ pound lean ground beef
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced

Additional Ingredients

  • 1 can (10 ounces) Rotel Diced Tomatoes and Green Chiles (undrained)
  • 1 cup beef broth
  • ¼ cup heavy cream
  • 1 cup shredded mild cheddar cheese
  • 3 tablespoons sliced green onion

Instructions

  1. Toast the Gnocchi: Melt the butter in a large cast iron or any oven-safe skillet over medium-high heat. Add the potato gnocchi and cook on one side for about 2 minutes until browned and toasted. Toss the gnocchi and continue cooking for another 2 minutes until both sides are evenly toasted. Remove the gnocchi from the skillet, place it on a large plate, cover, and set aside.
  2. Cook the Beef Mixture: Return the skillet to the burner and heat over medium-high. Add the lean ground beef and season with salt, pepper, paprika, and cumin. Add diced onion and minced garlic to the skillet. Cook, stirring occasionally, until the beef is fully browned and the onions are softened. Drain any excess fat.
  3. Simmer with Tomatoes and Gnocchi: Add the undrained Rotel Diced Tomatoes and Green Chiles, beef broth, and the toasted gnocchi back into the skillet. Stir gently to combine all ingredients. Bring the mixture to a boil, then reduce heat to low and cover with a lid. Let it simmer for a few minutes until the gnocchi is tender and most of the liquid is absorbed.
  4. Add Cream and Cheese: Remove the skillet from the heat. Stir in the heavy cream and half of the shredded cheddar cheese (½ cup) until combined. Sprinkle the remaining cheese evenly over the top of the mixture.
  5. Melt the Cheese Under Broiler: Place the skillet under the broiler and broil just until the cheese is melted, bubbly, and slightly golden. Watch carefully to ensure the cheese does not burn.
