  • 4 green onions, sliced

  • 1 1/2 cups heavy cream

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C). Spray an 8×10 inch baking dish with cooking spray to prevent sticking.
  2. Slice Cauliflower: Slice the cauliflower into thin slices, enough to make about two layers in the baking dish.
  3. First Layer: Place half of the cauliflower slices evenly in the prepared dish.
  4. Add Cheese and Onions: Sprinkle half of the shredded Gruyere cheese over the cauliflower layer, then evenly distribute the sliced green onions on top. Season with salt and black pepper to taste.
  5. Second Layer: Add the remaining cauliflower slices evenly over the first layers.
  6. Add Cream and Top Cheese: Pour the heavy cream evenly over the layered cauliflower, then top with the remaining shredded cheese.
  7. Bake Covered: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  8. Bake Uncovered: Remove the foil and continue baking for another 40 minutes or until the cauliflower is fork-tender and the cheese has turned golden brown. Check periodically to avoid burning.
  9. Rest: Let the casserole sit for 5 minutes after baking to thicken before serving.
  10. Store Leftovers: Store any leftovers in an airtight container and refrigerate.
