Ingredients

Peach Topping

  • ½ peach (5-6 slices)
  • 1 tbsp butter
  • 1 tbsp maple syrup
  • ½ tsp vanilla bean paste
  • ¼ tsp cinnamon

Oatmeal

  • ½ cup rolled oats
  • 1 cup water
  • 2-3 tbsp milk of choice
  • pinch salt
  • ¼ tsp cinnamon

Toppings

  • Granola (to taste)
  • Hemp seeds (to taste)

Instructions

  1. Heat pan and melt butter: Place a cast iron or nonstick pan over medium heat and add 1 tablespoon of butter. Allow it to melt completely to prepare for caramelizing the peaches.
  2. Cook peach slices: Add the 5-6 peach slices to the melted butter. Cook them for 1-2 minutes to start softening and warming the fruit.
  3. Add flavorings and caramelize: Pour in 1 tablespoon of maple syrup, ½ teaspoon of vanilla bean paste, and half of the cinnamon (approximately ¼ teaspoon). Use a spoon to coat the peach slices thoroughly, then flip and cook for another 1-2 minutes until the peaches become glossy and caramelized.
  4. Prepare oatmeal base: In a small pot, combine ½ cup rolled oats, 1 cup water, the remaining ¼ teaspoon cinnamon, and a pinch of salt. Bring the mixture to a boil over medium heat.
  5. Simmer and thicken oatmeal: Reduce the heat to low and continue cooking until the water is almost fully absorbed. Then add 2-3 tablespoons of your preferred milk and stir continuously until the oatmeal thickens to your desired consistency.
  6. Assemble the bowl: Transfer the creamy oatmeal to a serving bowl. Top with the caramelized peach slices, a sprinkle of granola for crunch, and a dusting of hemp seeds for added texture and nutrition.
