Ingredients

Vegetables

  • 1 lb young green cabbage, shredded
  • 2-3 small pickling cucumbers or ¾ of an English cucumber, peeled and cut into half-moons
  • ½ cup fresh dill

Dressing

  • 1½ tbsp olive oil
  • 1 tbsp apple cider vinegar (6%) or white cider vinegar (5%)
  • 1 tsp salt, or to taste
  • ¼ tsp cracked black pepper

Instructions

  1. Prepare the cabbage: Thinly slice the green cabbage using a sharp, large knife. Transfer the cabbage to a large mixing bowl and sprinkle with salt and cracked black pepper to season.
  2. Massage the cabbage: Using your hands, stir and gently massage the cabbage for a few minutes to soften it and evenly distribute the seasoning throughout the cabbage.
  3. Prepare the cucumbers and dill: Slice the cucumbers into half-moon shapes. Chop the fresh dill if necessary and add both cucumbers and dill to the bowl with the cabbage.
  4. Add dressing and mix: Drizzle the olive oil and vinegar over the salad. Mix everything thoroughly to combine all ingredients and flavors.
  5. Serve or chill: Serve the salad immediately for a crisp and fresh taste, or refrigerate for 15-30 minutes to allow the flavors to meld and chill the salad before serving.

  • For a crisper salad, use pickling cucumbers as they are less watery than English cucumbers.
