Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Spray a 9×13 inch baking pan with non-stick spray or use the butter and flour method to grease and flour the pan, ensuring the bars do not stick.

  4. Mix Dry Ingredients: Add the all-purpose flour, baking powder, and salt to the mixing bowl. Blend on medium-low speed until just combined to avoid overmixing and developing gluten.
  5. Add Zucchini: Fold in the finely grated and drained zucchini gently on low speed. The batter should be somewhat runny; if it looks dry, allow it to sit for 5 minutes so the moisture can redistribute.
  6. Incorporate Butterscotch Morsels: Stir in 1 cup of the butterscotch morsels with a spatula, mixing gently to distribute them evenly throughout the batter.
