Ingredients

Pasta

  • 16 ounces bucatini pasta

Sauce

  • 4 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 1 cup onion, diced
  • 1 tablespoon minced garlic
  • 3 tablespoons balsamic vinegar
  • ¼ cup fresh basil
  • Salt and pepper to taste

Topping

  • Burrata cheese, sliced into individual servings (about 8 ounces total)

Instructions

  1. Cook Pasta: Cook the bucatini pasta according to the package instructions in salted boiling water. Drain the pasta but do not rinse it, so it retains the starch for better sauce adhesion.
  2. Prepare Sauce: While the pasta cooks, heat olive oil in a pan over medium heat. Add the diced onion, minced garlic, and cherry tomatoes. Cover and cook, stirring often, until the onions soften and most of the tomatoes burst, about 10 to 15 minutes.
  3. Add Flavor: Once the majority of the tomatoes have burst, stir in the balsamic vinegar and fresh basil. Continue to cook uncovered until the rest of the tomatoes burst and the sauce thickens slightly, about 5 more minutes.
  4. Toss Pasta with Sauce: Add the drained pasta into the pan with the tomato sauce. Toss everything together gently to coat the pasta evenly with the sauce.
  5. Serve with Burrata: Slice the burrata cheese into individual servings and place on top of the pasta. Finish by sprinkling salt and pepper to taste, and drizzle with extra balsamic vinegar and olive oil. Serve immediately.
