  • ¾ cup chocolate chips
  • ½ cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla bean paste
  • ½ cup all-purpose flour
  • ½ teaspoon salt

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350˚F and lightly coat a 24-cup mini muffin pan with cooking spray to prevent sticking.
  2. Melt Chocolate and Butter: In a medium microwave-safe bowl, combine the butter and chocolate chips. Microwave for about 1 minute until melted, or melt them in a bowl set over simmering water, stirring until smooth and combined.
  3. Mix Sugar and Cocoa: Add the granulated sugar and unsweetened cocoa powder to the melted chocolate mixture. Whisk thoroughly until all ingredients are fully incorporated.
  4. Add Eggs and Vanilla: Whisk in the eggs one at a time to the mixture, then stir in the vanilla bean paste until well combined.
  5. Combine Dry Ingredients: Add the all-purpose flour and salt to the wet mixture. Use a rubber spatula to fold the batter gently until no flour streaks remain, being careful not to overmix.
  6. Portion Batter and Bake: Using a medium spring-loaded cookie scoop, evenly distribute about 1.5 tablespoons of batter into each cup of the prepared muffin pan. Bake for 12 minutes or until the brownies are set at the edges but slightly soft in the center.
  7. Cool: Transfer the pan to a wire rack and allow the brownie bites to cool completely for 30 to 45 minutes before removing them from the pan to prevent breaking.
