Instructions

  1. Cook Quinoa: Prepare quinoa according to the package instructions using your preferred method—stovetop, rice cooker, or Instant Pot—until fluffy and fully cooked. Set aside to cool slightly.
  2. Steam Broccoli: Pour 1/2 inch of water into a pot and bring to a simmer. Add broccoli florets, cover, and steam for 3-5 minutes until they turn bright green and are tender but still hold their shape. Drain and set aside.
  3. Prepare Baking Dish: Preheat your oven to 350°F (175°C). Lightly grease a deep 9 x 9 inch baking dish with cooking spray or oil to prevent sticking.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, chicken, steamed broccoli, egg, chicken stock, half of the shredded cheese, dried basil, dried oregano, salt, and pepper. Mix thoroughly until well incorporated.
  5. Assemble Casserole: Transfer the mixture into the prepared baking dish, pressing it down evenly. Sprinkle the remaining shredded cheese evenly over the top.
  6. Bake Covered: Cover the casserole dish with foil or a lid and bake in the preheated oven for 40 minutes to allow flavors to meld and the casserole to set.
  7. Bake Uncovered: Remove the cover and continue baking uncovered for an additional 5-10 minutes, or until the cheese on top is melted, bubbly, and slightly golden.
