  • 2 cups cooked chicken
  • 3 cups steamed broccoli florets
  • 1 egg
  • 1/2 cup chicken stock
  • 2 cups shredded cheese (divided into 1 cup and 1 cup portions)
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook Quinoa: Prepare the quinoa according to package directions using your preferred method—either on the stovetop, in a rice cooker, or an Instant Pot. Once cooked, set aside to cool slightly.
  2. Steam Broccoli: Pour 1/2 inch of water into a pot or pan and bring to a simmer. Add broccoli florets, cover, and steam for 3-5 minutes until the broccoli turns bright green and is tender but still firm in the middle. Drain and set aside.
  3. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C). Lightly spray a deep 9×9 inch baking dish with oil to prevent sticking.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, cooked chicken, steamed broccoli, egg, chicken stock, half of the shredded cheese (1 cup), dried basil, dried oregano, salt, and pepper. Mix well until all ingredients are thoroughly incorporated.
  5. Assemble Casserole: Press the combined mixture evenly into the prepared baking dish. Sprinkle the remaining 1 cup of shredded cheese evenly on top of the mixture.
  6. Bake Covered: Cover the casserole with foil or a lid and bake in the preheated oven for 40 minutes. This allows the flavors to meld and the casserole to cook through.
  7. Bake Uncovered: Remove the cover and bake for an additional 5-10 minutes to brown the cheese topping and give it a slightly crisp texture.
