This Boursin Salmon recipe features tender salmon fillets cooked in a creamy, herbed Boursin cheese sauce with a hint of garlic and fresh lemon juice. The salmon is seared to a golden brown and then simmered in a flavorful sauce made from sautéed onions, chicken broth, and fresh parsley, resulting in a delicious and elegant dish perfect for a quick weeknight dinner or a special occasion.

Ingredients

Salmon

  • 1 pound fresh salmon (cut into 4 pieces)
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)

Cooking Fats

  • 1 tablespoon olive oil
  • 1 tablespoon butter

Sauce

  • 1/2 medium onion (chopped)
  • 3/4 cup chicken broth (use low sodium if sensitive to salt)
  • 1 teaspoon fresh lemon juice
  • 1 (5.2 oz/150g) package Boursin Fine Herbs & Garlic cheese (softened)
  • 1-2 tablespoons chopped parsley

Instructions

  1. Prepare the Salmon: Remove the salmon from the fridge 15-30 minutes before cooking to bring it to room temperature. Cut into 4 pieces, pat dry, then season each piece evenly with garlic powder, salt, and pepper.
  2. Sear the Salmon: In a skillet over medium-high heat, add butter and olive oil. When hot, add the salmon pieces. Sear each side for 3-4 minutes until lightly browned but not fully cooked. Transfer the salmon to a plate and set aside.
  3. Sauté Onions: In the same skillet, add chopped onions and sauté for about 5 minutes or until they soften and take on a light golden color.
  4. Make the Sauce: Add chicken broth, fresh lemon juice, and softened Boursin cheese to the skillet. Stir continuously until the sauce is smooth and creamy. Allow it to bubble gently for 4-5 minutes, then stir in chopped parsley for freshness.
  5. Finish Cooking the Salmon: Return the salmon pieces to the skillet with the sauce. Reduce heat slightly and cook for another 3-5 minutes, turning gently if needed, until the salmon is cooked through, flakes easily with a fork, and the sauce thickens further.
  6. Season and Serve: Taste the sauce and season with additional salt and pepper if necessary. Serve the salmon immediately, spooning the creamy Boursin sauce over the top.

Notes

  • Allowing the salmon to come to room temperature before cooking helps it cook evenly.
  • Do not overcook the salmon during initial searing; it will finish cooking in the sauce.
  • Use low sodium chicken broth if you want to control salt levels.
  • Boursin cheese adds a flavorful creamy texture; ensure it is softened for better integration into the sauce.
  • Fresh parsley adds brightness to the rich sauce—adjust amount according to preference.
