Ingredients

For the Turkey Burgers

  • 1 ½ lbs ground turkey
  • 1 large egg
  • 1 tablespoon Creole Cajun Seasoning (homemade or store-bought)
  • ½ teaspoon garlic powder
  • Kosher salt & fresh ground black pepper, to taste
  • 1 teaspoon dijon mustard
  • ⅓ cup plain panko breadcrumbs
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh chopped parsley
  • ¾ cup blue cheese crumbles
  • 2 tablespoons avocado oil (or olive oil), for cooking

For Serving

  • 6 brioche burger buns (or buns of choice)
  • Butter, for toasting buns
  • Caramelized onion jam, store-bought
  • Lettuce leaves
  • Sliced tomatoes

Instructions

  1. Prepare the burger mixture: In a large mixing bowl, combine ground turkey, egg, Creole Cajun seasoning, garlic powder, salt and pepper, dijon mustard, panko breadcrumbs, soy sauce, chopped parsley, and blue cheese crumbles. Use your hands to gently mix until just combined. Cover the bowl and let the mixture rest for at least 20 minutes to allow the flavors to meld.
  2. Shape the patties: Lightly coat your hands with olive oil to prevent sticking and form the mixture evenly into 6 patties. Be careful not to overwork the meat to keep the burgers tender. Place the patties on a baking sheet lined with foil or parchment paper.
  3. Heat the skillet: Warm a large cast-iron skillet over medium to medium-high heat for 3-4 minutes, ensuring it is hot before cooking. Add the avocado or olive oil and swirl to coat.
  4. Cook the patties: Place the patties gently into the hot skillet in batches if necessary. Cook until each side is nicely browned and seared, about 2-3 minutes per side. Remove cooked patties to a clean plate and let them rest for a few minutes before assembling the burgers.
  5. Toast the buns: Spread a thin layer of butter on each side of the brioche buns. Place them in the same skillet over medium heat and toast for 1-2 minutes on each side until golden brown.
  6. Assemble and serve: Spread caramelized onion jam on both cut sides of each toasted bun. Add a blue cheese turkey patty, then top with lettuce and sliced tomato. Close the burgers with the top buns and serve immediately with your favorite sides.

Notes

  • Allowing the burger mixture to rest before cooking helps develop richer flavors and a better texture.
  • Use avocado oil or olive oil for a healthy fat choice and excellent pan searing.
  • Do not overwork the meat when shaping patties to keep them juicy and tender.
  • Blue cheese adds a sharp, tangy flavor that pairs well with the Cajun seasoning.
  • Caramelized onion jam complements the savory flavors and adds a touch of sweetness.
  • For a lower sodium version, adjust the amount of soy sauce and use low-sodium Cajun seasoning.
