Cilantro-Lime Vinaigrette

  • 2 Tbsp fresh cilantro, stems removed and minced
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions

  1. Make the cilantro-lime vinaigrette: In a small bowl, whisk together the olive oil, freshly squeezed lime juice, and minced cilantro until fully combined. Season the vinaigrette with kosher salt and black pepper to taste. This dressing can be prepared ahead of time and refrigerated for up to a week for convenience.
  2. Warm the rice and beans: Gently heat the cooked brown rice and black beans either in a microwave or on the stovetop. Once warmed, season the black beans with salt and pepper, adjusting to taste since canned beans can vary greatly in saltiness.
