Ingredients

  • 8 tablespoons butter, cubed and chilled
  • 1/3 cup sprinkles
  • 3/4 cup heavy cream, cold
  • 1 large egg
  • 2 teaspoons vanilla bean paste

Instructions

  1. Prepare Dry Mixture: Line a baking sheet with parchment paper. In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until fully combined.
  2. Incorporate Butter: Add the chilled, cubed butter into the flour mixture. Using a pastry cutter or your hands, quickly cut the butter into the flour until the pieces resemble pea-sized crumbs. Be careful not to overwork the dough.
  3. Add Sprinkles: Gently fold the sprinkles into the flour and butter mixture until evenly distributed. Place the bowl in the refrigerator to chill while you prepare the wet ingredients.
  4. Mix Wet Ingredients: In a small bowl or measuring jug, whisk together the cold heavy cream, egg, and vanilla bean paste until smooth.
  5. Combine Wet and Dry: Remove the chilled dry mixture from the fridge and pour the wet ingredients into it. Stir with a spatula or wooden spoon just until the dough comes together with a few dry spots remaining. Avoid overmixing to keep scones tender.
  6. Shape and Freeze Dough: Turn the dough out onto the prepared baking sheet and gently pat it into a 1.5-inch tall circle. Place the pan uncovered into the freezer for 1 to 2 hours to firm up before baking. Meanwhile, preheat your oven to 400ºF (200ºC).
