Big Mac Quesadillas are a fun and delicious twist on the classic burger, combining all the beloved flavors of a Big Mac into a crispy, cheesy quesadilla. Ground beef, American cheese, melty shredded cheese, and a special sauce made with mayonnaise, ketchup, mustard, and pickle relish come together between warm flour tortillas for a savory, satisfying meal perfect for lunch or dinner.

Ingredients

For the Quesadillas

  • 4 medium flour tortillas (or 8 small)
  • ½ lb lean ground beef
  • 8 slices American cheese
  • 1 cup shredded melty cheese
  • ½ cup onion, diced
  • 2 Tbsp olive oil (plus more for cooking quesadillas)
  • 1 ½ cup lettuce, chopped
  • Salt and pepper to taste

For the Special Big Mac Sauce

  • ½ cup mayonnaise
  • 1 Tbsp ketchup
  • 1 Tbsp mustard
  • 1 Tbsp pickle relish
  • 2 tsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt to taste

Instructions

  1. Prepare the Big Mac Sauce: In a small bowl, combine mayonnaise, ketchup, mustard, pickle relish, apple cider vinegar, garlic powder, onion powder, and salt. Mix well and adjust seasoning if needed. Transfer to a serving bowl and set aside.
  2. Cook the Ground Beef: Heat 2 tablespoons olive oil in a skillet over medium heat. Add the ground beef, season with salt and pepper, and cook while breaking it apart with a spoon until fully browned and cooked through. Keep warm for assembling.
  3. Heat the Skillet for Quesadillas: Add a bit of olive oil to a clean skillet and heat over medium heat to prepare for cooking the quesadillas.
  4. Assemble the Quesadilla: Place one tortilla onto the heated skillet. Layer 1 slice of American cheese, followed by some shredded cheese, then a spoonful of the cooked ground beef. Sprinkle diced onions over the meat and add a generous amount of the special sauce. Top with more shredded cheese and another slice of American cheese.
  5. Cook the Quesadilla: Fold the tortilla in half to enclose the filling. Cook for about 1 minute on each side or until the tortilla is golden and crispy and the cheese is melted inside.
  6. Repeat: Repeat the assembly and cooking process with the remaining tortillas and ingredients to make 3 more quesadillas.
  7. Serve: Slice each quesadilla into two triangles. Serve warm with chopped lettuce, extra pickles, and more special sauce on the side.

Notes

  • You can use either medium or small flour tortillas depending on your preference for quesadilla size.
  • The special sauce can be made ahead and stored in the refrigerator for up to 3 days.
  • For extra crunch, add shredded lettuce inside the quesadilla right before folding, or serve it generously on the side.
  • If you want a spicier sauce, add a dash of hot sauce or cayenne pepper to the special sauce mixture.
  • Use a non-stick skillet or cast iron skillet for best results when cooking quesadillas.
