Ingredients

Chicken Marinade

  • 5 chicken thighs (skin-on and bone-in)

  • 3 garlic cloves (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Rice and Vegetables

  • 1 tablespoon olive oil
  • 1 yellow onion (diced)
  • 2 cups baby spinach (lightly packed and roughly chopped)
  • 2 garlic cloves (minced)
  • 1 teaspoon dried oregano
  • 1 cup long grain white rice
  • 2 cups chicken stock
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Make the Marinade: In a bowl, combine olive oil, lemon juice, lemon zest, Dijon mustard, minced garlic, dried oregano, dried thyme, salt, and black pepper. Stir well until all ingredients are fully mixed to create the aromatic marinade.
  2. Marinate the Chicken: Place the chicken thighs in a glass dish and pour the marinade over them. Turn each piece to coat evenly. Cover and refrigerate for at least 30 minutes, preferably up to overnight to enhance flavor.
  3. Preheat Oven and Sear Chicken: Preheat your oven to 350°F (175°C). Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat.
