A quick and flavorful Bang Bang Salmon Bites recipe featuring tender salmon cubes seasoned and cooked to perfection either by air frying or baking, served with a creamy, spicy bang bang sauce for a delightful appetizer or snack.

Ingredients

Salmon

  • 1 lb center-cut Atlantic salmon fillet (skin removed and diced to 1-inch chunks)
  • 0.5 tsp coarse sea salt
  • 0.5 tsp garlic powder
  • ¼ tsp smoked paprika (or sweet paprika)
  • ⅛ tsp ground black pepper
  • 1-2 tsp honey (optional)
  • 1 tbsp olive oil
  • Olive oil spray (for the air fryer basket)

Bang Bang Sauce

  • ½ cup kewpie mayonnaise
  • 3 tbsp rice vinegar
  • ½-1 tsp hot sauce (or sriracha, sweet chili sauce)
  • 0.2 oz garlic (grated or crushed, about 1 large clove)
  • 1/2 tbsp light soy sauce (or 1 tbsp coconut aminos and omit the sugar below)
  • 1/2 tsp sugar
  • 1.5 tbsp ketchup
  • 2 pinches coarse sea salt
  • 1 bulb scallion (chopped or chive)
  • Toasted white and black sesame seeds (or furikake) for garnish

Instructions

  1. Prep the salmon: Slice the center-cut Atlantic salmon fillet into 1-inch cubes, ensuring the skin is removed. Place the chunks in a large bowl ready for seasoning.
  2. Season the salmon chunks: Add coarse sea salt, garlic powder, smoked paprika, ground black pepper, optional honey, and olive oil to the salmon pieces. Gently toss them until all the pieces are evenly coated with the seasoning mixture.
  3. Prepare the air fryer basket: Lightly spray the air fryer basket with olive oil to prevent sticking. Arrange the seasoned salmon cubes in a single layer, leaving a small gap between each piece. Cook in batches if necessary to avoid overcrowding.
  4. Air fry the salmon: Cook the salmon cubes in the air fryer at 350°F (177°C) for 8 minutes until cooked through and slightly crispy on the edges.
  5. Make the bang bang sauce: While the salmon cooks, combine kewpie mayonnaise, rice vinegar, hot sauce, grated garlic, light soy sauce, sugar, ketchup, and coarse sea salt in a bowl. Whisk together until the sauce is smooth and well blended.
  6. Remove the salmon from the air fryer: Once cooked, open the air fryer basket and wait about 10 seconds for the salmon to contract slightly. This eases removal and helps maintain the shape. Carefully transfer the salmon cubes to a serving plate to prevent breaking.
  7. Alternative baking method: If preferred, line a large baking sheet with parchment paper. Arrange the salmon cubes evenly with space between each. Bake on the top rack at 400°F (204°C) for 10–12 minutes until just cooked through.
  8. Serve the dish: Garnish the cooked salmon bites with chopped scallions or chives and sprinkle with toasted white and black sesame seeds or furikake. Drizzle some bang bang sauce over the bites and serve the remaining sauce on the side. Serve immediately while warm.

  • You can adjust the amount of hot sauce in the bang bang sauce to suit your spice preference.
  • Using skinless salmon or having your fishmonger remove the skin ensures a better texture in the bites.
