Ingredients

Chia Pudding Base

  • 1/4 cup chia seeds
  • 1 1/4 cup light coconut milk (or any milk of choice)
  • 1–2 tbsp maple syrup (or honey, agave nectar)
  • 1 tsp vanilla bean paste
  • 1/2 tsp cinnamon (optional)

Fruit

  • 1 banana, chopped or mashed

Instructions

  1. Prepare the banana: Finely chop or mash the banana in a bowl to help it incorporate smoothly into the pudding mixture.
  2. Combine ingredients: Add the chia seeds, cinnamon, light coconut milk, maple syrup, and vanilla bean paste to the banana in the bowl.
  3. Mix the pudding: Whisk the combined ingredients thoroughly to ensure the chia seeds are evenly distributed and there are no lumps.
  4. Set to thicken: Let the mixture sit for 5-10 minutes, then whisk again to break up any chia clumps and mix well.
  5. Chill: Cover the bowl and place it in the refrigerator for at least 2 hours or preferably overnight to allow the pudding to thicken properly.
  6. Serve: Enjoy the pudding as is or top it with additional chopped banana, coconut flakes, or your favorite toppings for added texture and flavor.
