  1. Preheat Oven: Preheat your oven to 250 degrees F (121 C) and position the oven rack in the center to ensure even heat distribution during baking.
  2. Slice Sweet Potatoes: Rinse and thoroughly dry the sweet potatoes. Slice them as thinly and uniformly as possible, about 1/8 to 1/16 inch thick. Using a mandolin slicer is ideal for uniformity, but a very sharp knife will work if handled carefully. Uniform thickness helps achieve crispiness throughout.
  3. Coat and Season: Toss the sweet potato slices lightly in olive oil to coat evenly, then sprinkle with sea salt if using. Lay the slices out in a single layer on a baking sheet lined with parchment paper for easy cleanup and to prevent sticking.
  4. Bake the Chips: Bake for approximately 1 hour 30 minutes to 1 hour 45 minutes. Flip the chips halfway through baking to promote even crisping on both sides, and optionally rotate the baking sheet for even heat exposure. Thinness of slices affects cooking time, so check for doneness every 10 minutes during the last hour to prevent burning.
  5. Cool and Crisp: Remove the baked chips once they are crisp and golden brown. Some may still feel slightly tender in the center; allow them to rest on the baking sheet for about 10 minutes to crisp up fully before serving. Enjoy immediately for the best texture and flavor.
