Ingredients

Butter Mixture

  • 1/2 cup butter, melted
  • 1 teaspoon minced garlic

Breading Mixture

  • 1 cup dried breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon garlic salt (can substitute regular salt)
  • Large pinch dried Italian seasoning
  • 1/8 teaspoon ground black pepper

  • 2 pounds skinless, boneless chicken breasts or thighs, cut into 1- to 2-inch pieces

Instructions

  1. Preheat the oven: Preheat your oven to 450°F (232°C) and position a rack in the center to ensure even cooking.
  2. Pat the chicken pieces dry: Use paper towels to thoroughly pat the chicken pieces dry. Removing excess moisture is important to achieve crispy breading after baking.
  3. Prepare the butter and breadcrumb mixtures: In a small bowl, stir the minced garlic into the melted butter. In a separate bowl, combine the dried breadcrumbs, grated Parmesan cheese, chopped parsley, kosher salt, garlic salt, Italian seasoning, and ground black pepper.
  4. Dredge the chicken pieces: Dip each piece of chicken into the garlic butter mixture, making sure it’s well coated, then dredge it into the Parmesan breadcrumb mixture until fully covered. If the butter thickens due to cold chicken, reheat the butter to maintain a smooth coating.
  5. Arrange on roasting pan: Place the coated chicken pieces on a 9- x 13-inch or larger roasting pan, leaving space between each piece for proper air circulation. If necessary, use multiple pans. Drizzle any remaining garlic butter over the arranged chicken.
  6. Bake until cooked through: Bake uncovered at 450°F for about 15 minutes or until the chicken reaches an internal temperature of 165°F as measured with an instant-read thermometer. The chicken will brown more on the bottom side, especially if using a non-stick pan.
  7. Serve: Allow the chicken nuggets to cool slightly before serving. Pair with your favorite dipping sauce for a delightful meal or snack.
