This easy oven-baked recipe makes a delightful meal for any occasion, blending Mediterranean flavors with simple preparation.

Ingredients

Salmon

  • 8 oz cooked salmon
  • Salt, to taste
  • Pepper, to taste
  • Za’atar seasoning or preferred seasoning blend, to taste

Baked Feta Pasta Sauce

  • 1 block (about 8 oz) feta cheese
  • 1 (10 oz) container cherry tomatoes
  • 3 cloves garlic, minced
  • Olive oil, for drizzling
  • Seasoning (salt and pepper), to taste

Pasta

  • 1 pound cooked pasta

Instructions

  1. Season the salmon: Preheat your oven to 400°F (200°C). Season the salmon fillets evenly with salt, pepper, and your preferred seasoning blend such as Za’atar. This will infuse the salmon with Mediterranean flavors.
  2. Bake the salmon: Place the seasoned salmon on a baking pan. Bake in the preheated oven for about 25 minutes, or until the salmon flakes easily with a fork. Using two small pans allows simultaneous baking of salmon and the pasta sauce mixture.
  3. Prepare the baked feta pasta sauce: In a baking dish, combine the cherry tomatoes and block of feta cheese. Add minced garlic, season with salt and pepper, and drizzle generously with olive oil.
  4. Bake the feta and tomatoes: Place the baking dish with feta and tomatoes in the oven alongside the salmon. Bake both for 25 minutes at 400°F until the tomatoes burst and the feta softens and starts to brown slightly.
  5. Mash and mix the feta sauce: Using a fork or potato masher, mash the roasted tomatoes and feta cheese together until they form a creamy, uniform sauce. Stir well to combine all the flavors.
  6. Combine pasta and sauce: Add the cooked pasta directly to the baking dish with the feta and tomato sauce. Mix thoroughly to ensure the pasta is well coated.
  7. Flake and add the salmon: Remove the salmon from its pan, break it up into bite-sized pieces, and gently fold it into the pasta and sauce mixture, combining all components evenly.
  8. Serve and enjoy: Transfer to plates or a serving dish and enjoy this succulent baked feta pasta with salmon immediately for best flavor and texture.

Notes

  • You can use any short pasta like penne, rigatoni, or fusilli for the best texture with the sauce.
  • Za’atar seasoning adds a nice herbal flavor, but you can substitute with dried oregano or Italian seasoning.
  • Leftover salmon can be substituted with canned salmon or smoked salmon for quicker prep.
  • Adding fresh basil or parsley as garnish adds brightness and color.
  • For a spicier kick, sprinkle red pepper flakes over the sauce before baking.
  • This dish reheats well but is best served fresh for optimal creaminess.
