  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 tablespoons unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla bean paste
  • 1 cup fresh blueberries

Instructions

  1. Preheat Oven: Preheat your oven to 375° F to ensure it’s adequately warmed for baking the doughnuts.
  2. Mix Dry Ingredients: In a bowl, whisk together the all purpose flour, baking powder, and kosher salt until evenly combined. Set this aside for later.
  3. Cream Butter and Sugar: Using a standing mixer or a hand mixer in a bowl, cream the softened unsalted butter with the granulated sugar until the mixture is light and fluffy.
  4. Add Wet Ingredients: To the creamed butter and sugar, add the egg, buttermilk, and vanilla bean paste. Mix thoroughly to combine all wet ingredients smoothly.
  5. Combine Mixtures: Gradually add the dry flour mixture to the wet mixture, mixing just until all ingredients are combined to avoid overmixing and tough doughnuts.
  6. Fold in Blueberries: Gently fold in the fresh blueberries, distributing them evenly without breaking them up.
  7. Fill Doughnut Pan: Spoon the batter into a greased and floured doughnut pan, filling each cavity about three-quarters full to allow room for rising.
