Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375℉ (190℃). Lightly grease an 8×8-inch baking dish with olive or avocado oil to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, combine the rolled oats, ground flax or chia seeds (if using), ground cinnamon, baking powder, and salt. Stir well to evenly distribute all dry ingredients.
  3. Add Wet Ingredients: Add the eggs, milk of your choice, vanilla bean paste, sweet potato puree, and maple syrup or honey to the dry ingredients. Stir until everything is fully incorporated and the mixture is uniform.
  4. Fold in Apples: Gently fold the roughly chopped apple pieces into the oatmeal mixture to evenly distribute the fruit throughout.
