Ingredients

Eggs

  • 8 large eggs

Filling

  • 1/2 ripe avocado (about 3.5 oz)
  • 1/4 cup Greek yogurt
  • 1 teaspoon Dijon mustard
  • 2 teaspoons lemon juice
  • Kosher salt and ground pepper (to taste)

Garnish

  • 1/2 teaspoon smoked paprika

Instructions

  1. Boil the Eggs: Place 8 large eggs in a saucepan and cover them with cold water just enough to submerge. Put the pan over medium heat and bring the water to a rolling boil.
  2. Cook and Cool: Once boiling, cover the pan and turn off the heat. Let the eggs sit covered for 15 minutes to cook through. Then, immediately transfer the eggs to an ice bath to cool completely, which helps in easy peeling.
  3. Peel and Prepare Yolks: Peel the cooled eggs carefully and cut each in half lengthwise. Gently remove the yolks and place them in a small food processor along with avocado, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
  4. Make Filling: Process the yolk and avocado mixture until smooth and creamy. Transfer this filling to a piping bag for neat filling.
  5. Fill Eggs: Pipe the avocado filling into each egg white half, filling the cavity completely for a visually appealing and tasty result.
  6. Garnish and Serve: Lightly sprinkle each filled egg with smoked paprika for a subtle smoky flavor and a pop of color. Serve immediately and enjoy!
