These Avocado Banana Muffins are a moist, naturally sweet treat perfect for breakfast or a snack. Combining ripe avocado and banana with honey and vanilla, these muffins offer a healthy twist on a classic favorite, with optional dark chocolate chips for extra indulgence. They are easy to prepare and bake to golden perfection in just over half an hour.

Ingredients

Wet Ingredients

  • 1 ripe avocado
  • 150 g ripe banana (approx 1-2 small bananas, weighed with skin on)
  • 2 eggs
  • 2 Tbsp honey (can be substituted with maple syrup)
  • 1 tsp vanilla flavoring

Dry Ingredients

  • 1.5 cups plain flour
  • 2 tsp baking powder
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. Prepare the wet ingredients: Add the ripe avocado, banana, eggs, honey, and vanilla flavoring to a food processor or blender.
  2. Blend until smooth: Blitz the mixture thoroughly until it forms a smooth, creamy batter, ensuring all ingredients are well combined.
  3. Prepare the dry ingredients: In a large bowl, sift the plain flour with baking powder. If you prefer not to sift, use a fork to mix the baking powder evenly through the flour to avoid lumps.
  4. Combine wet and dry ingredients: Pour the avocado and banana mixture into the bowl with the dry ingredients, adding the dark chocolate chips if using.
  5. Mix gently: Stir the mixture gently using a spatula or spoon until just combined. Do not overmix to maintain a light, tender muffin texture.
  6. Fill muffin tin: Spoon the batter evenly into a greased or lined 12-hole muffin tin.
  7. Bake: Place the muffin tin in a preheated oven at 180 degrees Celsius (356 degrees Fahrenheit) and bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool muffins: Remove the muffins from the oven and let them cool in the tray before attempting to remove them to prevent breaking.
  9. Serve and enjoy: Once cooled, serve the muffins fresh. They are delicious on their own or with a spread of your choice.
  10. Yum: Enjoy these healthy, flavorful avocado banana muffins as a nutritious snack or breakfast option.

Notes

  • Do not overmix the batter to ensure the muffins remain light and fluffy.
  • You can substitute honey with maple syrup to keep the muffins vegan.
  • If you do not have a food processor or blender, you can mash the avocado and banana manually but ensure they are very smooth.
  • Dark chocolate chips are optional but add a nice contrast in flavor.
  • Make sure to let muffins cool in the tray to avoid breaking when removing.
