A quick and refreshing Asian Shredded Carrot Salad featuring crisp carrot ribbons tossed in a tangy, slightly sweet, and spicy dressing made with rice vinegar, soy sauce, chili flakes, and a hint of citrus. Perfect as a light snack or a flavorful side to grilled proteins.

Ingredients

Salad

  • 4 carrots, shaved into ribbons

Dressing

  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1-2 teaspoons honey or maple syrup
  • A splash of lime or lemon juice
  • 1 teaspoon chili flakes
  • Salt to taste
  • 2.5 tablespoons olive oil

Garnish

  • Sesame seeds
  • Scallions (optional)
  • Extra chili flakes (optional)

Instructions

  1. Prepare the Carrots: Use a vegetable peeler, grater, or food processor to shave the carrots into thin ribbons. Transfer the carrot ribbons to a large mixing bowl to create the base of your salad.
  2. Make the Dressing: In a small bowl, whisk together rice vinegar, soy sauce, honey or maple syrup, lime or lemon juice, chili flakes, and salt until well combined. This dressing provides a balanced blend of tangy, sweet, and spicy flavors.
  3. Toss the Salad: Drizzle the prepared dressing over the carrot ribbons and toss thoroughly to coat every piece evenly. Taste and adjust seasoning if needed, adding more salt, chili flakes, or sweetness to suit your preference.
  4. Serve and Garnish: Arrange the dressed shredded carrot salad on a platter. Garnish generously with sesame seeds, sliced scallions if using, and additional chili flakes for extra heat. Serve immediately as a light snack or alongside grilled chicken or salmon for a complete meal.

Notes

  • For extra crunch, add chopped peanuts or cashews as garnish.
  • Use fresh lime juice for the best citrus flavor.
  • The salad is best served fresh but can be refrigerated for up to 1 day.
  • Adjust chili flakes to control the spiciness.
  • Substitute soy sauce with tamari for a gluten-free option.
