Ingredients

Salmon and Butter

  • 3 Tbsp. butter
  • 2 lbs. salmon fillet
  • Kosher salt and fresh black pepper, to taste

Spinach Artichoke Topping

  • 4 oz. cream cheese, at room temperature
  • 2 Tbsp. plain Greek yogurt (can substitute with sour cream or mayo)
  • 2 Tbsp. freshly grated Parmesan cheese
  • 1 garlic clove, minced
  • 1/2 cup chopped baby spinach
  • 3/4 cup roughly chopped canned artichoke hearts

Optional Toppings

  • 1/4 cup shredded mozzarella cheese (optional)
  • Fresh chopped parsley, for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the salmon.
  2. Prepare the Baking Dish and Salmon: Add the butter to a 9×13-inch baking dish and place it in the oven just long enough for the butter to melt. Remove the dish from the oven, place the salmon fillet inside, then spoon the melted butter over the salmon. Season generously with kosher salt and fresh black pepper.
