These homemade Apple Truffles capture the essence of apple pie in bite-sized treats, combining the fruity taste of apple butter and granola butter with warm spices, a gooey caramel center, and a creamy white chocolate coating. Finished with a crunchy graham cracker crumb garnish, these truffles are an indulgent, easy-to-make dessert perfect for sharing or enjoying as a delightful snack.

Ingredients

Filling and Dough

  • 1/2 cup apple cider granola butter (may substitute regular, almond, or cashew butter)
  • 1/3 cup apple butter
  • 1/3 cup coconut flour
  • 1 tsp apple pie spice
  • 1 tsp cinnamon
  • 2 tbsp caramel of choice (or caramel candies)

Coating and Garnish

  • 1 cup white chocolate
  • 1-2 tsp coconut oil
  • Crushed graham cracker crumbs (for garnishing)

Instructions

  1. Mix Base Ingredients: In a medium bowl, combine the apple cider granola butter and apple butter. Stir until fully incorporated, ensuring an even mixture.
  2. Add Dry Ingredients and Spices: Add the coconut flour, apple pie spice, and cinnamon to the mixture. Use a rubber spatula to mix everything together until a consistent dough forms.
  3. Form Truffle Balls with Caramel Center: Using a cookie scoop, portion out dough and roll it into balls with your palms. For each truffle, place a dollop of caramel in the center, cover it with a small piece of dough, then gently roll into a smooth ball. Place the formed truffles on parchment paper. (Tip: Using chewy caramel candies is an option but may harden too much when refrigerated.)
  4. Melt White Chocolate Coating: Melt white chocolate gently either in the microwave or over a double boiler. Stir in 1 to 2 teaspoons of coconut oil to help the chocolate become smooth and glossy.
  5. Coat Truffles: Dip each truffle into the melted white chocolate to coat it entirely. Return coated truffles to the parchment-lined baking sheet.
  6. Garnish: Immediately sprinkle crushed graham cracker crumbs onto each truffle while the chocolate is still wet, giving a crunchy texture and appealing finish.
  7. Chill to Harden: Place the baking sheet with truffles into the freezer for 15-20 minutes to allow the coating to fully harden.
  8. Storage and Serving: Remove from freezer and enjoy. Store truffles in the refrigerator and consume within 7-10 days for optimal freshness. For longer storage, truffles can be frozen; thaw in the fridge prior to serving.

Notes

  • Chill the truffle mixture for 15 minutes before forming balls to make rolling less messy and easier to handle.
  • Adding coconut oil while melting white chocolate improves smoothness and coating quality.
  • Alternative garnishes include rolling truffles in cocoa powder or drizzling with dark chocolate for different flavor profiles.
