Ingredients

Oatmeal Base

  • ½ teaspoon vanilla bean paste
  • Pinch of sea salt

Apple Topping

  • ½ cup diced apples
  • 2 teaspoons maple syrup
  • ¼ teaspoon cinnamon

Garnish

  • 2 Tablespoons chopped pecans

Instructions

  1. Cook Apples: In a small saucepan, combine diced apples, 2 teaspoons maple syrup, and ¼ teaspoon cinnamon. Sauté the mixture over medium heat for a few minutes until the apples soften and develop a texture similar to baked apples. Remove from heat and set aside.
  2. Cook Oats: In another saucepan, add ½ cup rolled oats, 1 cup water or milk, ½ tablespoon maple syrup, ¼-½ teaspoon ground cinnamon, ½ teaspoon vanilla bean paste, and a pinch of sea salt. Bring the mixture to a low boil over medium-high heat, then reduce to a low simmer. Cook for 5-7 minutes, stirring occasionally, until the oats absorb most of the liquid and the oatmeal becomes creamy.
  3. Serve: Transfer the cooked oatmeal to a bowl. Top with the sautéed cinnamon apples, 2 tablespoons chopped pecans, a sprinkle of cinnamon, and additional sweetener if desired. Enjoy warm for a nourishing breakfast.
