Ingredients

Dry Ingredients

  • 2 cups rolled old-fashioned oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 tablespoon ground flaxseed

Wet Ingredients

  • 2 cups non-dairy milk (unsweetened vanilla almond milk preferred)
  • ½ cup unsweetened applesauce
  • ¼ cup maple syrup
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla bean paste

Add-ins

  • 1 cup diced apple, divided
  • ½ cup raisins

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C). Lightly spray an 8×8 inch baking dish with non-stick spray to prevent sticking.
  2. Mix Dry and Wet Ingredients: In a large bowl, combine the rolled oats, cinnamon, baking powder, sea salt, ground flaxseed, non-dairy milk, applesauce, maple syrup, melted coconut oil, and vanilla bean paste. Stir until all ingredients are well blended.
  3. Add Fruit: Fold in the raisins and ¾ cup of the diced apples gently into the oat mixture to distribute them evenly.
  4. Assemble in Baking Dish: Pour the oat mixture into the prepared baking dish. Evenly spread it out and top with the remaining ¼ cup of diced apples for extra texture and visual appeal.
  5. Bake: Place the baking dish in the preheated oven and bake for about 40 minutes or until the center is set and a toothpick inserted into the middle comes out clean.
  6. Cool and Serve: Allow the baked oatmeal to cool slightly before serving. Optionally, drizzle with almond butter, extra almond milk, or maple syrup for added flavor.
  7. Storage and Reheating: Store leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, cover the entire dish with foil and warm in a 350°F oven for approximately 20 minutes. For single servings, reheat in a 350°F oven or toaster oven for 5-10 minutes, or microwave for about 1 minute until warmed through.

Notes

  • This recipe is naturally vegan and dairy-free by using non-dairy milk and coconut oil.
  • Using apples with some firmness ensures the fruit holds texture after baking.
  • Maple syrup provides a mild, natural sweetness; adjust amount based on desired sweetness.
  • Ground flaxseed adds a nutritional boost and helps bind the baked oatmeal.
  • For a gluten-free version, ensure that oats are certified gluten-free.
