This Almond Poppy Seed Bread is a moist and flavorful quick bread combining the nutty taste of almonds with the subtle crunch of poppy seeds. Topped with a delicate almond and orange glaze, it’s perfect for breakfast, brunch, or a delightful snack.

Ingredients

Bread

  • 1 1/4 cups sugar
  • 2 eggs
  • 1/3 cup butter, melted
  • 1/3 cup vegetable oil
  • 3/4 cup milk
  • 1 teaspoon vanilla flavoring
  • 1 teaspoon almond extract
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon poppy seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Glaze

  • 1 cup powdered sugar
  • 1/2 teaspoon almond extract
  • 1-2 tablespoons orange juice (or milk)

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 325°F (163°C). Grease and flour a loaf pan thoroughly to prevent sticking, then set it aside while you prepare the batter.
  2. Mix Sugar and Eggs: In a large mixing bowl, whisk together the sugar and eggs until the mixture is smooth and slightly fluffy, helping to incorporate air into the batter for a lighter texture.
  3. Add Wet Ingredients: Add the melted butter, vegetable oil, milk, vanilla flavoring, and almond extract to the sugar and egg mixture. Whisk everything together until smooth and fully combined.
  4. Combine Dry Ingredients: In a separate bowl or directly into the wet mixture, add the flour, poppy seeds, baking powder, and salt. Stir gently until the ingredients are just combined to avoid overmixing, which can toughen the bread.
  5. Pour Batter and Bake: Pour the batter into the prepared loaf pan, smoothing the top. Place it in the oven and bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs attached.
  6. Cool the Bread: Remove the bread from the oven and allow it to cool in the pan for 5 minutes. Then, carefully remove it from the pan and transfer it to a wire cooling rack to cool completely.
  7. Prepare the Glaze: In a small bowl, combine the powdered sugar, almond extract, and 1 tablespoon of orange juice. Stir until smooth, adding more orange juice as needed to create a glaze with the perfect drizzle consistency.
  8. Glaze the Bread: Drizzle the glaze evenly over the cooled bread. Allow the glaze to set before slicing and serving.

Notes

  • For a dairy-free option, substitute milk with almond milk or another plant-based milk and use a non-dairy butter.
  • If you prefer a stronger almond flavor, you can add an additional 1/2 teaspoon almond extract to the bread batter.
  • Ensure the bread is fully cooled before glazing to prevent the glaze from melting and becoming too runny.
  • The glaze can be customized with lemon juice instead of orange juice for a different citrus note.
  • This bread stores well at room temperature in an airtight container for 2-3 days or can be frozen for up to 2 months.
