These juicy and flavorful ground chicken meatballs are ready in under 15 minutes using an air fryer, perfect for a quick and easy weeknight meal. Made with gluten-free ingredients and packed with savory spices, they make a delicious protein option the whole family will enjoy.

Ingredients

Meatball Mixture

  • 1 pound ground chicken
  • 1 large egg – lightly whisked
  • 1/4 cup gluten-free breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon olive oil
  • 1 tablespoon dried parsley
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Mix Ingredients: Add ground chicken, egg, breadcrumbs, parmesan cheese, garlic powder, onion powder, dried parsley, kosher salt, and pepper to a large mixing bowl. Mix thoroughly with your hands until all ingredients are well combined.
  2. Shape Meatballs: Roll the mixture into 1 tablespoon-sized meatballs, aiming for 12-15 total. Using an ice cream scoop helps to create even-sized meatballs. Place them on a lined baking sheet or clean plate.
  3. Preheat Air Fryer: Preheat your air fryer to 400°F. Insert a liner inside the air fryer basket for easier cleanup, and spray the liner lightly with cooking spray if using parchment paper.
  4. Cook Meatballs: Arrange the meatballs in a single layer inside the air fryer basket, ensuring they are not touching for even cooking. Cook for 8-10 minutes, shaking the basket halfway through to brown all sides evenly. Continue cooking in batches until all meatballs are done.
  5. Serve: Remove the meatballs from the air fryer and allow them to cool slightly. Serve warm with your favorite sauce, such as a mixture of ketchup, Worcestershire sauce, and maple syrup if desired.

Notes

  • Use high quality, preferably organic pasture-raised ground chicken for the best flavor.
  • Cooking times may vary depending on your air fryer model; meatballs should be cooked through and reach an internal temperature of 165°F.
  • Arrange meatballs in a single layer to prevent sticking and ensure even cooking.
  • To make dairy-free, substitute parmesan cheese with a dairy-free alternative.
  • Oven alternative: bake meatballs on a lined sheet at 400°F for 20-25 minutes.
  • Let meatballs rest a few minutes after cooking as they will continue to cook slightly while cooling.
  • Try a tasty sauce topping of 1/4 cup ketchup mixed with 1 teaspoon Worcestershire sauce and 1 teaspoon maple syrup.
  • Using an air fryer liner sprayed with cooking spray prevents sticking and makes cleanup easier.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F or microwave until warm.
