Ingredients

Tomato Base

  • 2 cups (480 ml) canned diced tomatoes

Cream and Thickener

  • 1 cup (240 ml) coconut cream or full fat coconut milk
  • 1 teaspoon cornstarch or tapioca flour

Seasonings and Herbs

  • ¾ teaspoon sea salt or to taste
  • ¼ teaspoon cracked black pepper or to taste
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika or regular paprika
  • ½ teaspoon garlic powder or to taste
  • ½ teaspoon onion powder
  • ½ teaspoon dried basil and/or fresh chopped basil leaves
  • 1 teaspoon light brown sugar

Additional Ingredients

  • 2 teaspoons olive oil (optional)
  • 2 tablespoons lemon juice

Instructions

  1. Combine ingredients: Add all the ingredients into a nonstick saucepan, ensuring the cornstarch or tapioca flour is evenly distributed to avoid lumps.
  2. Heat the sauce: Place the saucepan over high heat and start a timer for 4 minutes to cook the sauce quickly.
  3. Whisk frequently: Using a silicone whisk to protect the pan’s surface, whisk the sauce continually until well combined with no lumps.
  4. Thicken the sauce: Allow the sauce to simmer briefly to thicken, then whisk again to achieve a smooth, creamy consistency.
  5. Serve: Pour the hot sauce over your favorite cooked pasta such as gnocchi for a quick 2-minute pasta option, and enjoy immediately.

Notes

  • For even faster meal prep, serve with gnocchi which cooks in about 2 minutes.
  • You can adjust the seasoning such as salt, pepper, and garlic powder to your taste preference.
  • The olive oil is optional but adds a subtle richness to the sauce.
  • If you prefer a thinner sauce, reduce the amount of cornstarch or omit it entirely.
  • Fresh basil can be added as a garnish for enhanced aroma and flavor.
